For many of us, the start of August is a little melancholy.

Summer holidays have been taken, temperatures are starting to drop at night –  it’s back to reality.

All the more reason to savour what’s left of summer right now with these 3 unique recipes featuring the best of summer produce. In season tomatoes, peaches and corn all get the star treatment they so richly deserve here.

Step into the spotlight summer tomatoes – we’ve been looking forward to you all year long! Packed with Vitamins A, C, K, folate and potassium, this Tomato, Onion and Toasted Lemon Salad also features sugared and roasted lemons that are 100% edible and add a citrusy twist.

Peaches are high in potassium and Vitamins A and C, and their juiciness lends itself beautifully to baking.  Peach Crumble Slab Pie is a cross between a  pie and a crumble and will feed a crowd, making it an ideal addition to a late summer barbecue.  Feel free to sub peaches for plums, blueberries, cherries or pears.  Anyway you slice it, this recipe is a winner.

Not much can rival just-picked corn with a touch of butter and sprinkling of salt.  But even a purist might be tempted to do a little culinary off-roading with this delicious (and no cook)  Chilled Corn Soup with garlic, buttermilk and basil.  Bonus:  corn is rich in fibre and packed with anti-oxidants.
